Apricot Oolong Cooler

Summer has finally arrived, bringing longer days and the warmth of the sun. To cool down, I’ve crafted a refreshing iced drink that pairs Milk Oolong with Apricot. I hope you enjoy it as much as I do!

Apricot is the perfect partner for milk oolong. The sweet tanginess of the fruit harmonizes beautifully with the creamy, floral profile of the tea. The bright orangey-red hues of apricot syrup at the bottom of the iced milk oolong evoke the image of a summer sunset over a lake.

For an added kick, you can spike this summery drink with a shot of gin.

Iced Apricot Oolong / Apricot Oolong Cooler

*Serves 2

Ingredients

  • 4 Apricots
  • 70g / ⅓ cup sugar
  • 8g milk oolong tea
  • 380ml water divided 
  • Ice cubes
  • 2 shots of gin* 

*optional for cocktail

Instructions

To Make Apricot Syrup:

  1. Over medium low heat, add 4 chopped apricots, 80ml water and 70g sugar 
  2. Stir until combined, and bring to a soft boil 
  3. Once boiling, reduce to a low heat and allow the mix to simmer for 30 minutes uncovered, stirring occasionally 
  4. Turn off the heat, allow mixture to cool to room temperature, and strain into a jar. 

To brew Milk Oolong Tea

  1. Pour 300ml of water at 95 degrees celsius over 8g of milk oolong tea
  2. Steep for 1 minute and pour out tea liqueur 
  3. Set aside to cool

To assemble:

  1. Fill a glass with ice 
  2. Pour 3 tablespoons of apricot syrup and cooled milk oolong over ice
  3. Stir and enjoy!

Mona, this summer I started making cold brew and ice brews as well – so much fun to pile up mini ice spheres onto the tea leaves and wait forever till it brews in the refrigerator!
I cold brewed your White Peony tea as well.
