Ceylon Tea Brewed 3 Ways

Ceylon tea is one of my favorite, and most versatile teas. It tastes great as a pure tea, but also serves well as the base of several tea drinks. If you enjoy black tea drinks often made from a Ceylon tea base (think Hong Kong style milk tea and iced lemon tea), keep reading. Hailing from the Uva highlands of Sri Lanka, this is Ceylon tea brewed in 3 different ways. Delicious and easy to make.

1. Ceylon Tea Latte - for a cold, rainy day

Notes: Heartwarming, rich, full-bodied, creamy.

Mood: Fills the soul with comfort. Perfect for a cold, rainy day. Similar to a London Fog (minus the bergamot).

Ingredients: Ceylon Highlands tea, hot water, milk of choice (frothed), sweetener of choice. Prepare hot tea concentrate and pour warm milk foam on top.

Optional: Add a dash of lavender syrup and garnish with tea leaves and dried lavender for enhanced aromatics.

2. Iced Honey Lemon Tea - for a hot, sunny afternoon

Notes: Citrusy, brisk, refreshing.

Mood: Cooling and energizing for when the weather starts to warm up and get more sunny. Ceylon tea and lemon work so well together!

Ingredients: Ceylon Highlands tea, fresh lemon slices, honey. Hot-brew a concentrate with lemon and honey. Pour over ice.

3. Pure Ceylon Tea - to awaken the mind before the work day begins

Notes: Brisk, malty and complex, with notes of pine wood and cooling undertones of fresh herbs and wintergreens.

Mood: Awakening, energizing, gets the creative juices flowing.

Ingredients: Ceylon Highlands tea (3g or 1 Tbsp), hot water (300ml at 95 degrees celcius) brewed for 3-4 minutes.
