Rosemary Oolong-Paloma Mocktail

Spring is here and I am so grateful for the crisp air, longer days and flowers in bloom! In the spirit of the season, I've also been appreciating nature and getting creative. I hope you will enjoy this refreshing rosemary oolong-paloma.

The tangy yet sweet grapefruit, with its pink hues mirrors the flowers in bloom. I’ve carefully melded the tart, zingy notes of grapefruit, with the fresh aromatics of rosemary and floral yet vegetal tones of baozhong oolong to give a beautifully balanced drink.

Whether taken as a mocktail, or spiked with a shot of gin, this is the perfect way to appreciate the new season!

Rosemary Oolong-Paloma

*Serves 4

Ingredients

  • 750ml water
  • 12g Baozhong tea
  • 300ml Grapefruit juice
  • A few sprigs of fresh rosemary
  • Soda water to top
  • 40ml (1.5oz) gin per glass *optional for cocktail

Instructions

To make grapefruit ice cubes:

  1. Pour grapefruit juice into ice tray
  2. Add rosemary leaves to each cube
  3. Place in freezer until solid


To cold-brew Baozhong:

  1. Add 12g of Baozhong tea leaves to 750ml of room temperature water.
  2. Refrigerate for 8-10 hours.
  3. Once ready, strain out the leaves.


To assemble:

  1. Fill champagne flute or wine glass with grapefruit ice cubes
  2. Pour cold-brewed baozhong over ice
  3. Top glass with soda and stir
  4. Garnish with fresh rosemary sprigs and enjoy!
  5. Enjoy sipping on this ever-evolving drink as the grapefruit ice cubes melt.
